Pinot Noir.
Colour: intense, brilliant red.
Nose: lovely bouquet with notes of spices and liquorice and red and black berries.
Palate: beautifully rounded on the palate with delicious notes of red fruits such as cherry.
Enjoy with a plate of country ham, terrine, roast chicken, tuna steak with tomato, or a nice cheese platter.
Serve at a temperature of about 15 °C. (59°F).
This wine can be kept for 3 to 5 years in a cellar under good conditions.
Located to the west and parallel to the Côte de Beaune, the Hautes-Côtes de Beaune are higher hills, interspersed with faults that give great variety to the crops and landscapes. The Hautes-Côtes are also unique in the original cultivation method used in the vineyards: tall, wide vines that are less sensitive to frost than low vines. The appellation covers 22 communes in Côte-d'Or and 7 communes in Saône-et-Loire. It covers an area of 835 hectares, with 669 hectares of red and rosé wines and 166 hectares of white wines.
Clay-limestone soils. Marly formations, slopes covered with limestone scree / South-east exposure / Steep slopes / Altitude between 280 and 450 metres.
The grapes, harvested mechanically or manually (with destemming), undergo cold maceration for two days at 8-10°C to extract the aroma compounds, colouring matter and body of the wine. Fermentation lasts around ten days with daily pumping over and punching down. Ageing, partly in barrels (25% new) and partly in vats, continues for 8 to 9 months, including malolactic fermentation. Finally, the two parts are blended before bottling.
The 2025 campaign in Burgundy was marked by a water deficit of approximately 30% and an early harvest, which began as early as August 25th in the Côte de Beaune.
Despite more unsettled weather at the start of the picking season, the sanitary state of the grapes is excellent, and they show a beautiful aromatic concentration.
The reds are characterized by gentle extractions and deep color, while the whites combine richness, concentration, and freshness.
A vintage of character and elegance is emerging for both red and white wines.
